One of my all time favorite desserts is sticky toffee pudding. Its my go to for Christmas and I love the recipe by Rock Recipes. I highly recommend it. It has yet to fail me. I find a recipe makes enough for one 6 cup bundt plus some mini puddings which I bake in ramekins (or you could use muffin tin). I do make extra toffee sauce ( a double batch) because for me, you can never have enough toffee sauce (which is much easier to make than caramel - I promise!)
When ready to eat drizzle the toffee sauce over the pudding (if you have made everything ahead of time you can warm it up in the oven - which is what I do) and pair with coffee, a cream sherry, or even port and enjoy!
